Once harvested, the ripe coconuts are opened and their nutrient-rich pulp is immediately cold pressed and the milk obtained is immediately pulverized. This process allows to preserve the fresh coconut flavor, safeguarding its nutritional elements, including the precious medium-short-chain saturated fats (MCT-MCFA).
In particular, the fresh pulp of the walnuts of coconut with a bright white color, not yellow (indicator of rancidity phenomena), it is cold pressed to extract the precious elements it contains and with them the characteristic exotic aromas and scents.
Everything is still made today according to the tradition and respecting the ancient knowledge of the peoples of South-East Asia, without resorting to intensive cultivation and modern industrial processes such as refining , deodorization, and bleaching.
It does not need to be kept in the fridge (even after opening) and has a long shelf life.
