The micelle is the colloidal form in which casein occurs. The micelles are the physical agglomerate constituting the base of casein and contain the forms of the amino acid chains intact in all their structures. Based on chemical reactions, the micelles that are released into the milk, in addition to proteins, also contain minerals, calcium, phosphorus, magnesium, potassium and sodium. The micelles remain intact in their constitution until the protein is subjected to aggressive processing. What does Native Micellar Casein mean?
